
Carreteiro Rice with Calabresa Sausage
One-pot rice with calabresa sausage, tomato and fresh herbs.

Ingredients
- 250 g cooked or ready-to-eat smoked Sadia calabresa sausage, cut into half-moons
- 10 ml oil
- 100 g chopped onion
- 2 chopped garlic cloves
- 150 g diced tomato
- 250 g uncooked white rice
- 500 ml hot water, plus a little more if needed
- 10 g chopped parsley and chives
- Salt and black pepper to taste
Preparation
- Heat the oil in a heavy-based pan. Brown the calabresa over medium heat for 3–4 minutes.
- Add the onion and soften for 3 minutes. Add the garlic and tomato and cook for another 2 minutes.
- Add the rice and stir for 1 minute. Pour in the hot water, add pepper and taste the liquid before adding salt.
- When boiling, reduce the heat and partially cover. Cook for about 15–18 minutes until the water is absorbed and the rice is tender. Add extra hot water gradually if needed.
- Turn off the heat, cover and rest for 5 minutes. Fluff with a fork and finish with parsley and chives.
