
Baked Chicken Fillet with Pineapple
Oven-baked chicken fillets with pineapple, onion and a lightly sweet-and-sour sauce.

Ingredients
- 600 g Sadia chicken breast fillets, about 2 cm thick
- 300 g pineapple rings
- 150 g sliced onion
- 15 ml olive oil
- 2 chopped garlic cloves
- 15 ml soy sauce
- 15 g honey
- 50 ml water
- Black pepper to taste
Preparation
- Preheat the oven to 200 °C. Mix the oil, garlic, soy sauce, honey, water and pepper.
- Put the chicken in a bowl with half the sauce. Refrigerate for 10 minutes; keep the remaining sauce separate from the raw meat.
- Arrange the onion and pineapple in a baking dish. Place the fillets on top and pour over all the sauce, including the marinade, which will cook in the oven.
- Bake for about 25–30 minutes until the centre of the thickest part of the chicken reaches at least 74 °C. Thicker fillets may need longer.
- Rest for 5 minutes and serve with the pineapple and onion. Use only the cooked sauce from the baking dish, never raw marinade as a serving sauce.
